Quick Vegetable Lasagna

Fluffy Banana Pancakes

The perfect quick and sweet breakfast treat!




Ingredients:

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Butter or oil for cooking

Instructions:

  1. Mash Bananas: In a medium bowl, mash the bananas until smooth.
  2. Mix Dry Ingredients: In a separate bowl, combine flour, sugar, baking powder, and salt.
  3. Combine Wet Ingredients: Add milk, egg, vanilla, and melted butter to the mashed bananas. Whisk until well blended.
  4. Create Batter: Gradually add the dry ingredients to the wet mixture. Stir until just combined—don’t overmix!
  5. Cook Pancakes: Heat a non-stick skillet over medium heat. Add a small amount of butter or oil. Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles appear on the surface, then flip and cook until golden.
  6. Serve: Stack your pancakes high and top with syrup, sliced bananas, or a dusting of powdered sugar.
