The perfect quick and sweet breakfast treat!
Ingredients:
- 2 ripe bananas
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- Butter or oil for cooking
Instructions:
- Mash Bananas: In a medium bowl, mash the bananas until smooth.
- Mix Dry Ingredients: In a separate bowl, combine flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: Add milk, egg, vanilla, and melted butter to the mashed bananas. Whisk until well blended.
- Create Batter: Gradually add the dry ingredients to the wet mixture. Stir until just combined—don’t overmix!
- Cook Pancakes: Heat a non-stick skillet over medium heat. Add a small amount of butter or oil. Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles appear on the surface, then flip and cook until golden.
- Serve: Stack your pancakes high and top with syrup, sliced bananas, or a dusting of powdered sugar.
